Spinach Mushroom Quiche



Makes 2
Need:
2 Frozen Pie Crusts
4 Portabella Mushrooms
8 Eggs
8 oz of Extra Sharp Cheddar Cheese
2 Hand-fulls of Spinach
1 tsp of Flax Seed Oil
2 tsp of Olive Oil
1 tsp of Garam Masala
5 Basil leaves
1 tbsp of Fat-free Half and Half
1 Very Small Yellow Pepper
1 Shallot
4 Cloves of Garlic
Freshly ground Sea Salt and Black Peppercorns


How 2 Get It Done:

1.Preheat oven to 350 degrees.

2.Saute mushrooms in olive oil along with yellow pepper; then add shallots and chopped garlic.

3.Mix eggs with creamer and flax seed oil, then add Garam Masala and beat until blended.

4. Brush to coat olive oil on the two pie crusts.

5. Place small cubes of sharp chedder cheese on pie crusts, then add mushrooms and yellow peppers, top with spinach and then add egg mix.

6. Cover with liberal grind of fresh ground sea salt and black pepper, enough to make a slight crust.

7. Bake for 30 minutes, check after 25.

8. Enjoy!
